What is a hash?
A hash is a fixed length fingerprint of a piece of text. The same text always gives the same hash, and a tiny change gives a completely different one. You cannot turn a hash back into the text.
Which one should I use?
Use SHA-256 for new work. MD5 and SHA-1 are fine for checking that a file or text has not changed by accident, but they are no longer safe against deliberate tampering.
Can I use a hash to store passwords?
Not a plain hash like these. Passwords need a slow, salted method such as bcrypt or Argon2, which your login system should provide.
Can I hash a file?
This tool hashes text. A file gives a different result than its name or contents pasted as text.
